Cheese Mixer Operator ($31.84/hr.) - Night shift - 12 hours
This position requires responsibility for the mixer and extruder operations. Through your development as a cheese maker you will have to understand pH impacts vs cheese temperature, touch and feel. Understand up and downstream impacts of the mixer operation; be able to properly communicate with your peers, and leadership. The night shift mixer operation has a heavy focus on sanitation of the equipment. In this position you will have to confirm the equipment and surrounding areas are clean and free of extraneous.
Responsibilities
- Follow pre-start up procedures and inspections
- CIP all of the mixers through the extruders
- Operate the wet and dry mixers to a level of proper cheese consistency and feel
- Control the curd rate to mixer and auger speed
- Maintain and record all ingredient application
- Navigate and control MES and SAP
- Control the addition of wet and dry ingredients
- Maintain temperature within proper set points
- Monitor condition of gaskets and Teflon coating
- Take samples and test pH level
- Perform can fill check to verify the accuracy of the flow meter
- Ensure correct dwell time in the dry mixer
- Identify problems with production equipment and troubleshoot solutions
- Provide back-up to brine operator duties
- Disassemble equipment for cleaning and make connections for cleaning equipment in place
- Understand the operation of the sanitizing system
- Perform chemical testing
- Any additional duties as assigned
QUALIFICATIONS
- Able to read and write
- Demonstrated ability to complete work assignments with high degree of accuracy
- Must be able to lift 46 lbs from floor to overhead (0” – 72”) daily
- Must be able to climb stairs hourly
Preferred
Prior sanitation experience in a food environment/industry
