General Summary:

At Leprino Foods, starting compensation for this role - Cheese L2 Starter Room Rate is $27.59 (Break in rates and $0.75 cents differential pay from 6PM - 5:59AM applies). This operator is responsible for providing good quality bulk starter for the cheese making process for the Cheese Department. 

JOB DESCRIPTION

1. Document any operational change during production and anything out of the ordinary, in the comment section of MES as well as any required data into the MES system.
2. Prepare R/C cultures for inoculation.
3. Perform starter activity tests and pull required samples at the correct intervals.
4. Acquire a California Pasteurization License.
5. Prepare RC media and TMS media.
6. Maintain the silo and HTST charts as required for legal documentation.
7. Practice inventory control by maintaining an adequate supply of quality starter to the vats without producing excess.
8. Maintain equipment including, but not limited to, homogenizers, pumps, HTST press, and valves.
9. Adhere to all Company and regulatory GMPs.
10. Communicate between, co-workers, departments and supervision as required.
11. Must successfully complete JTPR and consistently perform work according to SOP.
12. At all times, operate in a manner consistent with safe operating procedures.
13. Responsible for providing good quality bulk starter for the cheese making process in accordance with Company Standard Operating Procedures (SOP).
14. Maintain the Master Sanitation schedule. Ensure data is accurate and up to date.
15. Perform other duties as assigned.

Required Knowledge, Skills & Abilities:

1. Knowledge of sanitary GMPs.
2. Physical requirements to perform job as defined in the essential job function.
3. Must be able to exercise judgment and make decisions.
4. Computer literacy.
5. Obtain Pasteurizer License.
6. Autonomous, able to work with minimal oversight.
7. High level of risk assessment and troubleshooting.
8. Analytical, math skills, documentation.
9. High attention to detail and consistency.
